Amazing purchase. Easy to embed shapes in the dough. When used as a set, you can create beautiful curved patterns, and when using just the blade, delicate designs on bread dough are possible. A satisfying product.

The presentation is very nice - sturdy box to hold the lame and razors. Little leather pouch to hold the used razors after cleaning. Only slightly tricky to get the razor on and off the tool for cleaning. But it really does the trick for scoring bread (see photo) - even on the very wet and sticky dough I make for my rustic breads - so probably does an amazing job on stiffer doughs. If I were to give it a grade instead of stars, it would be a solid B.

I recommend if quality is concern. Much larger than I thought. Pics shown cm. The quality of wood and stainless head appear good, time will tell. Definitely hand wash.The handle is nice diameter making holding it ez. Too thin tires hand. Stirring, blending in bread making can be tiring, the handle appears strong without being heavy (114 gm). It’s absolutely smooth. The head is thick quickly blends, the diameter slightly bigger than 3”/28 cm.The scoring tool is fine, appears to be same quality recd with my Banneton baskets (oval and round). Changing blades often enough, holding at a 90 degree angle and not hesitating create perfect scoring.Bread baking requires a learning curve. I do my initial blend by hand to learn hydration, and confidence w sticky doughs. Transfer to my KA Pro for kneading, lower longer best. Imperfect homemade bread is awesome, so dive in. Your family-friends will be happy to taste test. So many great YT videos-tutorials! So many recipes and flours. I bought a good quality bread maker. Quickly found A much prefer my hands, KA, proofing and oven baked. It’s just sitting. Dive in! TY

The box is really nice. The blades are extremely sharp - be VERY careful when using!***EDIT - I will admit that with practice, it was NOT the fault of the knife but totally the user (me)… so I have changed my review to - this is a great knife!

This Lame (aka, Gringette) is1. nicely made,2. has an easy to grip handle3. has a stainless steel tip is a bit thicker thus sturdier4. comes with a safety cover5. comes with a storage case6. comes with spare blades (and blades are cheap to buy afterwards)7. is designed to curve the blade in useI've used lots of other alternatives such as scissors, serrated knife, paring knife (and others). All dragged on the dough and made a ripple along the edges. I bought cheap plastic scalpels thinking that their pencil-like shape would make it easy. Although they didn't drag as much they were only OK. (but I do use them for designs on the top of the loaf, boule or batard after doing the main cut).The thing that this lame gives me is the ability to make a long, deep (1/2 inch, or about 1.5 cm) slash in one go. The curve causes the valley made by the slash to have a high side with a distinct edge. (Hold the tip at a 45 deg angle to the top of the bread.) That bakes up to a very nice "ear" that I never got using a different tool.If you are able to make a nice tasting loaf, get this to make it nice looking, too. First impressions count.

My first time using a lame. This is very well made, fits well in the hand, and it’s easy to attach the blade by following the instructions. I’ve used it once so far, and it cuts easily and beautifully. Although the blade attaches at a curve, I did not find it difficult to make a straight cut. Extra bonus having the leather pocket to protect the blade (and me!) and the storage box is well made and convenient. The extra blades assure that this will last a long time as of course each blade has four edges. Great value!
