This tool takes rolled strips of pasta dough and stretches them and is supposed to cut them off. I wouldn't count on the cutting, you might have to cut them yourself after cranking the dough through the wooden shaping rollers and metal shaping/stretching channel on top of the tool.Before this you need to make the dough and prepare it in strips. For this I have a bread machine for the kneading and Kitchen-Aid rolling attachment. After rolling it, I can cut it into strips and then into this cavatelli machine.It comes with several dough recipes, including normal pasta, potato pasta, and spinach pasta. I appreciate this because I come at this with two left thumbs when it comes to bread making, but even I have been able to make pasta with the bread machine and pasta roller, and now I can make this other shape of pasta.The tool is well made. I like the way the base is made, strong and no heavier than it has to be, with a large diameter clamp. If you have a lip on your counter or workbench, it will attach firmly there, and you'll need it because you will be putting some force on that handle. I am sorry to see that this could not be adapted to be powered by the Kitchen Aid, because the shaft is not accessible.

We make fresh pasta every week, and let me tell you—this little machine has been a game-changer! Store-bought cavatelli and gnocchi often have added sodium, which my husband needs to avoid, so finding a way to make them fresh at home was a must. And now that we have this, he can enjoy gnocchi again—he’s absolutely thrilled!The wooden rollers are sturdy, and while you still have to cut the pasta to size, I don’t mind the extra step one bit. The pasta comes out beautifully textured, just like the real deal. It’s easy to use, even for beginners, and gives you that authentic Italian pasta-making experience right in your own kitchen.If you love fresh pasta, this is absolutely worth it. The quality is excellent, cleanup is simple, and most importantly, it makes delicious pasta that makes my husband smile. That’s a win in my book!
