Every time I reach for a knife, this one is gone and needs to be washed. Favorite of everyone in the house. Razor sharp, small, but works like a bigger knife. We all love the shape, handle, length of this knife for general, all-around daily use.

Amazing knife for butchering. Good blade size and shape (comparing to other honetsuki's, not all of the blades shapes i liked, its just looks same, but its not same at all), super sharp obviously, good balance, light wieght, looks really nice and feels amazing to work with this guy.

Se siente muy bien en la mano este cuchillo, es el primero que compro de esta marca y llego en una caja muy sencilla, me esperaba algo más ostentoso por el precio pero cuando lo ves de cerca y lo cargas, se siente un buen cuchillo más que otros que llegan en cajas bonitas y fundas etc., eso si, me hubiera gustado que le agregaran una funda. Pude ver en la etiqueta que esta hecho en Japón.

I like and own same line of Shun knives, I like them all but this one I find the blade little too short for my liking. Mainly bought for chicken fabs. Ended up returning it. Would have kept it if the blade is one inch longer. Otherwise very well built and sharp right out of box, typical Shun..

As with all Shun knives we purchased, it holds edge well for a week and is exactly the knife we were looking for. Because of the task, honing it can be a pain for an average home cook like me. If you wish to keep it sharp though, invest in good honing setup (I use wetstone 10k/4k and a leather strop).

Holy Moley! This knife rocks. You will feel like a surgeon with this blade in hand. Allows precision cuts, razor sharp, and really well balanced. Having used/owned 12 different Shun Classic blades, this one is exceptional for its intended use, breaking down whole Chickens, boning legs of Lamb, and other similar tasks where a short and sharp blade allows the user to work around bone and ligament to section whole birds.I immediately went out the day I received this knife and bought four whole chickens to practice.....absolutely amazing blade. Having years of experience in cutting meats and culinary preparation, I was totally satisfied and then some with this Honesuki. Bear in mind however, this blade won't instantly turn you into an expert. There are a number of videos that illustrate the techniques necessary to do this [...] and once you practice a bit, you get the hang of the moves necessary to section out your bird.Our family eats a lot of chicken, and breaking down your own birds saves you a lot of money...enjoy!

This is my first foray in Japanise knifes. I'm a home cook, I cook every day and love it, if I don't cook we don't eat so after all these years I thought if not now then when. I have good knife skills I take it quite seriously. I never buy sets just À la carte only what I need. First and for most this knife is vary sharp out of the box, it's size and shape are just right for it's intended use. Taking chickens apart deboning, frenching and butterflying. It's quite light but balance is good, the D shaped handle feels good to my mid sized hands, as for edge retention it's to soon to tell I never cut bones with it that's not what this knife is for it will easily go through cartilage plus small chicken bones but the heavy stuff don't even think about it just grab a Clever or your heavy use chefs knife. The tip is perfect for cutting in the tight spots taking the legs of chickens and making sure you get the oyster out is a breeze with this knife at this point I can't see my self ever going back to my old boning knife in short I love this thing. As for the price of Japanese knifes... well there not cheep but if you love to cook as I do and appreciate great quality and beauty then if not now when.

I have been wanting this knife for a long time, but wasn't sure if I should spend the money and add it to my already vast Shun collection. I received it today and was disappointed at first because I didn't think it was sharp enough. I went to the store and bought a chicken to test it out with. This little knife is great for breaking down whole birds! It cuts through chicken like butter and makes the job of separating joints easier than I have experienced with any other knife. Please note that this knife is not meant to cut through hard bone. If you have ducks or chickens with heads and feet on them, you should use a cleaver to chop the necks and backs.The knife blade is about 4½ inches long and has a sharp, pointed tip. Buying whole chickens and breaking them down yourself can save money. I use this knife not only for my own meals, but also for my dogs who are on a raw diet. The left over carcass and wing tips can be used for stock. This is just a great little knife, and I would recommend it for anyone who breaks down chickens, cornish hens, capons, or duck on a regular basis.
