I am returning this machine. I expected a new, unused product. What I got was a product that did not have any of the peel off protection the instructions said to be certain to peel off prior to using. Not only did it lack that protection, but it showed scratches, a bunch of blurred finger prints, and the bottom was scraped at several places along its rounded edges. And there was a nick on the top of the container. The other thing I did not expect was for the heating element being positioned along the bottom of the container and not on the side of the container. This was never mentioned in the verbal description, nor could it be seen in the pictures of the product. Seeing all this I did not try to use this product but promptly repacked it for return.

Bought the water oven to cook with while working on remodeling the kitchen.After reading commitments about sous vide devices that you attach to pots or plastics tubs, I became aware of the need for protecting the surface you set it on from the heat. The water oven interior tub sits above the counter on little balls, so no need to use a trivet.The double liner also serves as an insulator, though it still throws some heat into the kitchen. 131 degrees for an hour wasn't bad, but not sure about cooking for extended periods during the summer.The lid was great - nice fit, and didn't notice an increase in humidity in the kitchen.The only thing I found lacking was the missing minimum water level line that is mentioned in the operator's manual. I would knock of a half a star, if that was an option. Just had to use common sense. The unit comes with an interior basket to keep the food off the heating unit. I put about an inch of water above the basket's rim - going off my canning days.As far as sous vide cooking - I will stick with traditional methods when the remodeling project is done. The texture of the meat is mushy - like every filet mignon I ever had. I also tried broccolini - doesn't come close to steamed veggies - and what a mess trying to get those guys into the bag. Looking forward to seeing if this method would be good for salmon and shrimp - two things I usually overcook. Oh yeah - hard boiled eggs...no boiling pot of water!
