There are internal and external indicators to let you know that each pouch has been exposed to steam for the correct time and temperature.

Pouch size is small the dimensions are the size of the total pouch. Seller should list pouch size to avoid confusion . I had to have them or I would have sent them back

The pouch is half the stated size. The size they state is the TOTAL size. They never show the pouch side, so I wasn't aware. These will ne abou 1" too short.
