I use this jar to make kefir and it works well for that. The only thing that isn't my favorite is how easy the lid wire mechanism comes apart

Made to last, that describes these jars. The rubber gasket will, as such things always do, deteriorate over years of use, but Bormioli has been making these jars for many years and will likely continue to for many more. They sell replacement gaskets inexpensively. So, when the gasket gets old -- or just gets grungy -- replace it. The gaskets can be easily removed and are dishwasher cleanable.The glass jar and lid are also dishwasher-safe. The metal fittings are not dishwasher cleanable, but they are very easy to remove from the glass and then reattach.So, it's very easy to keep these jars clean and functional. They are designed and supported to be maintained rather than landfilled (and even when end-of-life does come, the glass and metal are highly recyclable). In our throw-away world, it's refreshing to find a product designed and supported to last for many years.The glass is heavy-duty.These jars are not round. The lid and the opening are round, but the body of the jar is squared off. This is a more efficient use of shelf space. This design makes this jar more compact than it would be were it a simple cylinder.Being glass, these jars are 100% food-safe. They are very sanitary. The seal is quite good. So, these jars will be quite good to keep all sorts of liquid and dry ingredients.

Over the course of a year I have ordered multiple Bormioli Rocco Fido square jars in several sizes, including: two in this size with the blue lid (33 3/4 oz), a 25 1/4 oz, four in the 17 1/2 oz size, and a 6 3/4 oz. I was so happy to get rid of all my old plastic storage containers (some of which I am sure contained the dreaded BPA) and replace them with these wonderful jars. I use this size to store my medicinal Essiac tea (which I make up by the quart), stews, and coffee beans. I use other sizes to store nuts, homemade salad dressings, homemade condensed cream of mushroom soup (all organic, and so much better tasting in recipes than store bought canned), homemade stir-fry sauce (so all we have to do is measure out what we need, when we need it - so quick and easy!), homemade salsas and 'cowboy caviar,' as well as left over sauces, soups, etc. Hubby takes soup, stew. pasta dishes, etc. in the 17 1/2 oz size to work for his lunches. These jars are also perfect to use for storing sourdough bread starters in the refrigerator. I love that these containers are clear; I can see which container is holding what I'm looking for at a glance. They are attractive, versatile, and easy to care for; made from heavy, quality glass that will last forever when taken care of properly. Although the base is square, the (wide) mouth is round, so any right-sized gasket will work. Official are available right here at Amazon, however, if you prefer those. When I took the jar out after the drying cycle I noticed a weird white powdery residue on the metal, but was able to clean it off. To remedy this, if I do put jars with metal in the dishwasher, I stop the dishwasher just before the drying cycle begins, rinse off the jar metal (to remove all traces of dishwasher detergent residue), put the jar w/metal back in the dishwasher, and let it run through the drying cycle. No powdery residue or discoloration on the metal.* although I'm sure that the jars are airtight when the gasket is new/not worn, I have had some leakage from a jar when tipped to the side after using the gasket only a few times.NOTE: I paid full price for my Bormioli Rocco Fido Square Jar with Blue Lid; I did not receive the product for free or at a discount in exchange for an evaluation. This high-quality Italian-made jar is just beautiful. I bought it to store small amounts of natural yeast starter, and it is just the right size. It may not be big enough for some starters, though. Since I don't think I'll want more than 6 cups of starter at any one time, I think it will be just right for my purposes. There are other Bormioli jars which are bigger that may be better suited for some starters.I've uploaded some pictures, and one of them does show the 11" danish dough whisk. That does *not* mean the whisk comes with the jar; you're buying *only* the jar when you purchase this listing. I showed it with the whisk, though, to address the one reviewer who said it doesn't fit. Perhaps she was using the 14" danish dough whisk instead, because you can clearly see that my 11" whisk fits down into the jar without issue. I'll use it to stir the starter.When the lid is clasped shut, the jar is a little over 8 1/2" tall. It's a 4" square jar (with a round lid), but the clasp adds about 1 1/2" to one dimension; so realistically, it's 4" by about 5 1/2". The opening of the jar is just under 3 1/2" (ID). Plenty big enough to accommodate the 11" danish dough mixer, but definitely not big enough for the large whisk.The extremely tight-fitting lid with its gasket makes this jar suitable for storing any product that needs protection from bugs or moisture. For starters, the lid should be left ajar during certain times, to allow air in and gases to escape. It could be dangerous to close it up tightly when the gases need released.The jar comes "unassembled", as it were; you have to put the gasket on after you wash the jar. It's in the bottom of the jar during shipment and the lid is protected by a piece of paper with the Bormioli logo. The sticker on the lid is one that removes very easily and doesn't leave any sticky residue. You peel that off and wash and dry the jar and gasket and put the gasket on the lid. The metal mechanism wasn't centered, but it's movable so I just turned it a bit and it lined up to the center.Very nice product, and I'm sure I'll be buying more (I have 6 of the 2 liter jars for storing homemade dry baking mixes and they're great, too). I like that they're all square, since they take up less space that way. I'm a little bummed that I had to pay 3 dollars more than what it's selling for now, but it's okay. I think it's worth the money I paid since it is a sturdy jar that will undoubtedly last many years.
