This is a handy gadget if you need to separate several eggs. For example, I sometimes use it if I am making homemade ice cream, meringue, or any recipe that is finicky enough that even a touch of egg yolk will keep the whites from properly stiffening. When I have to separate 6 or more eggs, I pull it out of the drawer, but you can easily separate an egg by dropping it into your clean hand and separating your fingers slightly over a bowl. I know it is not an ESSENTIAL tool, but it does do a good job of thoroughly draining the whites from the yolks. I like the hook at its side that makes it possible to rest it over a bowl while you drain the egg white. It is a sturdy, well-made tool that is a luxury more than a necessity, but I recommend it!

This egg separator takes the mess out of separating egg yolks and whites. You may need to roll the egg separator from side to side carefully to allow the white to release from the yolk. I've separated over a dozen eggs now and only broke the second yolk because I tilted the separator too quickly from side to side. I would buy it again.

Bought a cheaper plastic one but didn’t do the job. Get this one. Works every time over a bowl. Yolk doesn’t break and you shake to separate the egg whites.
