Origin of Phoenix Mountain Tea

Phoenix Mountain is famous of its rich resources of tea cultivars. Up to date, there are more than 80 cultivars. Each cultivar can grow up to a few meters height and produces tea with a distinctive flavor profile. Therefore, every single shrub is harvested and processed individually, that's where the name Dan-cong is being derived.

It is beautiful to watch the rolling tea oolong loose unfurl into nice whole leaves while steeping in the pot. Importantly, this kind of chinese oolong tea leaves can be brewed more than 3 times.

How to brew wulong tea?

Warm up the tea pot with boiling water, put about 1-2 Tsp oolong, pour small amount of boiling water into the tea and immediately pour out. This helps to damp te oolong leaves, wash and help them to start steeping.

After that pour 8 fl.oz of boiling water that about 85-95°C (185-205°F) and cover tea pot for 3-5 minutes, and then enjoy.

Good quality Chinese tea is either extremely hard to find in the US, or it's just ridiculously pricey. This one is the least quality tea I would drink. Not exciting at all, but if you have no other choice....

There are times where I brewed it incorrectly, and it came out bitter and smokey.However, if brewed right, it develops this nice barbecue honey aroma and taste. I used less leaves and a little bit more water. Do not use boiling water, let the water sit in the kettle for a moment, then pour. The taste is very good for the price.

I have been into tea for over 25 years and while my expectations were not high based on the price, this still managed to disappoint. There were two medium-sized straight black hairs which was somehow still not the most disappointing aspect. The leaf looks correct for this type of tea, but that is where it ends. The aroma is very weak from the dried leaf and the flavor matches. It is almost entirely devoid of any peach/apricot notes, and only a very slight floral profile with the overall cup being extremely light and basic. At most, it can be steeped a second time resulting in an even weaker infusion than the first. There are much better lower-priced Dan Congs out there, some even less than this one. Seek those out.

The dry tea has absolutely no fragrance. When I brewed it (gong fu style), the liquor was pale. I could taste nothing except bitterness. I threw it out.
