This plate retracts down into your cylinder to help eliminate the meat (or juice) from coming back into the cylinder when pressing. Place it in the tank under the steel plunger plate. Easy cleanup. Makes using the cast iron stuffer much more efficient. This is the smaller size which is 6 1/2" diameter. (Larger size for 6 & 8 qt also available from Smokehouse Chef)
