If you don’t sharpen knives, get a serrated knife. If you don’t know how to use a honing steel, get a serrated knife. I started with a Victorinox 8” chef’s knife, and before I knew it, it was my go-to knife consistently. I have German knives. I have Japanese knives. Victorinox not only brings up a razor sharp edge---it keeps it, and is very comfortable to use even with wet or greasy hands (carving a duck comes to mind). I hit mine a couple of times with a steel before each use. I only have to go to my Chef’s Choice Diamond Sharpener about every six months or so for a couple of pulls. All of my kitchen knives are sharp enough to shave the hair off of my arm. Kitchen knives need not be sharper than that, come to think of it, neither does any knife. Two selling points that I loved: 1) outstanding steel 2) really comfortable handle

A clarification on the description, the blade is actually 1.5 inches thick at the handle. It’s a bit thicker than the other carving knives I looked at (like the Mercer Genesis), but it carved a turkey extremely well. The length is great for getting into the joints and the handle was nonslip, even when it got wet or greasy. It was also very sharp, I was able to carve thinner slices and cut easily through the skin. It has a little bit of flex but is a fairly stiff blade. A great knife for this price point ($26 when I got it).

GREAT PRODUCT! KNIFE HANDLE FEELS GREAT, BETTER BLADES, SHARPER, FEEL OF KNIFE IN HANDS EXCELLENT AND FAR LESS EXPENSIVE THAN GERMAN BRANDS. I HAVE USED BOTH AND HAVE GIVEN MY GERMAN KNIVES AWAY.

I actually bought 9 Victorinox knives when I bought this one. They are all wickedly sharp, nicely-weighted, comfortable to use, knives. The 10" slicer is a fully-fledged slicing knife which pretty much cuts through anything that you lay it upon (including skin!). It is dishwasher safe, but all of my new knives are usually hand-washed straight after use and put back in their bamboo drawer tidy. I have nicked this knife once or twice but I have a hand sharpener that brings it back to super-sharp within a few swipes of the sharpener. Lovely knife (knives) and couldn't be more happy with them. Tremendous knives and tremendous value (who would pay 200 bucks for a single "super" knife (Henckels, Wusthof, etc.) when you can get 9 equally good and varied knives at the same price?)
