If you are more of a chopper and less of a rocker when it comes to your knife work then you need a santoku. Of all the nice ones I’ve ever used I find myself reaching for this more often. The grip is solid, the blade is well made and thin enough to do delicate work, just enough flex. The hollow ground breaks do help keep veggies and such from sticking too bad but it’s not perfect. There is enough rise on the handle to allow for knuckle clearance when in use on a cutting board and the grip is excellent even if hands get wet. Highly recommend

A year or so ago i realized that buying individual knives was better than buying a set. Sets were what i bought in the past. With sets I ended up with knives I didn’t like. So I stumbled on this knife brand and have been happy with my choice of knife. Super lightweight, cuts and washes well. I use a sharpener frequently as I can’t stand a full knife. These knives sharpen really nicely and hold the sharpness easily. I also purchased blade guards for keeping in drawer. Knife blocks are ugly so i keep in a drawer.

I own a lot of knives including brands like Shun and Wusthof. This Victorinox knife is my absolute favorite kitchen knife. It’s durable, lightweight and holds an edge. It’s an excellent value at the price point. Highly recommended!

This is the second Victorinox chef knife I have purchased. Bought the first one six years ago and with occasional honing it kept a good edge until lately so I decided to purchase another. I have also given this knife as Christmas gifts with great feedback from the recipients.

This is a very good knife. I have used the Chef's knife from Victorinox and the knife can maintain good sharpness for about 3-4 cooking sessions, before you need to strop and hone it. This Santoku is lighter than the Chef's knife and the handle is thinner than the Fibrox pro style handle (that is what my chef knife has), so it makes easier to grip for people with small to medium sized hands.The knife came sharp out of the box and effortlessly chops through vegetables like potatoes and onions. The steel is such that it does not need to be immediately wiped off like high carbon steels, so a little bit of clumsiness is ok when working with this knife. More expensive knives from my collection can hold edge longer, but their steel is also harder, so it takes longer to sharpen or hone those. This is a good compromise between the low cost $10 knives and much higher $70+ knives, I would say.One thing to be mindful is that the knife's blade is thin, so using it on harder and larger foods like butternut squash or pineapple would be a bad idea. The chef's knife is better suited for that.

The good: This knife is sharp. It cut through raw potatoes like butter. The blade is really fantastic.The bad: Wow. The handle is really terrible. It's a cheap, super lightweight plastic. Blades like this need some heft to them for a good grip. I wish I would have listened to other reviews that warned about the lame handle.That said I do plan on keeping it because the blade is so good. It's just not the knife I was hoping for. I've used this brand previously and I've never seen them come with such horrible handles. I'll think twice about ordering another knife from this brand because of the handle issue.

I love this knife. The first one I bought was from a knife store and my initial reaction was that it felt cheap. Well, it is not. It is wonderful. I really like that it is thin and light. It cuts through things more easily than a thicker bladed knife. Even though it is thin, it holds an edge very well. My kids liked it when they visited, so I bought each of them one for the holidays. Be careful; it is very sharp. Somebody has already cut themselves trying to scoop up veggies from a cutting board. They were accustomed to a dull knife. They are more careful now. I paid less for this knife here than at a knife store.
