Start making cheese

  • Start by slowly heating the milk to 92°F.
  • Then add enzyme
  • The milk now needs to sit quietly for 60 minutes while the culture works and the rennet coagulates the curd.

Follow the recipe for your cheese

Cut the cheese curd into cubes

  • Once the curd has hardened and is ready for cutting, you need to divide it into cubes.
  • To cut, use a Horizontal Cheese Curd Cutter of the required size and a long knife.

Transfer the curds to molds

It worked as expected. No frills. Because it stays on the countertop when making cheese It would be cool if they decorated it somehow

I'm very new to cheese making and have stuck to making mozzarella and ricotta. Getting this press is a game changer and allowed me to start making semi hard and harder pressed cheeses.Setting up was very straight forward and the directions were brief but clear. The boards are basic plywood with just a little finish, and in use a lot of whey is pressed out of the cheese. At first I just propped it up by the sink and a plate under one side of the press so that the whey would run into the sink. I later ordered a whey board the would go under the cheese strainer and channel the whey into the sink.I used various weights on top of the upper board to slowly press out the whey out over about 24 hours, and this worked well. The resulting white cheddar is still aging, (I'm only going to age it 3 months) but the cheese press worked perfectly on this! I can't wait to test this one out!

I'm learning how to make cheese and started out with just the very basics, but to go beyond that I needed a press. I decided to get this one as it is small, perfect for small batch and the small molds that I have (I can actually fit two of my smallest molds in this one if I skip the drain tray), as well as my small space. The mold that came with this press needed some help clearing out excess plastic in a lot of the holes in the bottom of it but it works fine now. Since it is just my husband and I, I will probably use my smaller molds the most though. If you don't have a drain tray, get one....these boards are bare wood, untreated so either get a tray or treat the wood with food grade mineral oil or beeswax, just as you would a cutting board...these boards will last a lot longer if you do. I use a drain tray most of the time, but I also treated my boards with beeswax for extra protection in case of spills, etc. This is a good basic starter press and I'm pleased with it so far. Easy to put together, easy to use. For those that don't know, it doesn't come with weights, you have to supply those....just FYI.

The boards could be thicker. Not sure if this will last long. I am just now getting into cheese making and didn’t want the expense. This is cheep and looks cheep. But am going to keep it to use for softer cheeses. Definitely can’t use of a hard cheese.

I've made simple homemade cheeses before using a colander, cheesecloth, and a heavy can in a pot for weight, but that's a pain. The whey tends to get all over the place, and it's hard to put enough pressure on the cheese to really squeeze out the liquid. So when I had the chance to try this cheese press, I was really excited!I love that the set offers an easier, tidier way to squish the whey out of your now cheese using pressure from a sandwich of screw-tightened wooden boards. These have a nice, smooth finish and seem well-oiled ot keep them from absorbing the liquid from your cheese. In addition, the set includes a cheese mold to shape your finished product, so all those curds are unlikely to escape down the drain.As the directions indicate, you can add more weight to increase the pressure if needed. But it should be far less messy to stack a couple of big cans or a cast iron skillet on a device actually DESIGNED to press cheese instead of balancing them precariously on a bundle of curds in a colander over your sink.I'm looking forward to trying this out soon!

I have been using a homemade press of similar design since I started cheesemaking. I decided to get this press when I saw it listed as a vine review item because it is smaller than the one I made, and I thought it might be nice to have a smaller press for occasion. The smaller size is nice for storage. As you can see in my pictures, PetriStor's large drip tray just fits in this press, and it easily fits Hozprom's largest hard cheese mold.The press itself is made of a composite wood, as well as some long metal screws. I am not sure why there is an end piece for both ends of the metal screw. I left off the top pieces because I do not want to have to unscrew every time I am flipping the cheese. When I made my homemade press I chose to use 5/8 dowel rods instead of metal screws. The dowel rods have the advantage of not having to spend time screwing & unscrewing. The screws have the advantage of being sturdier. The screws also have the advantage that you can screw the winged nuts (not sure what they are actually called) down to hold the top board level. An issue I've had with weights is that if you do not get them centered the board can tilt, and the cheese will not be uniform in thickness. With this press you can avoid that issue.Although the image only shows 25 lbs of weight on the cheese, I was able to get up to 40 lbs by also using a cement block. I will either have to buy a heavier kettlebells or get more creative to use more weight when using this press.Overall, I will say this is a nice little press. I knocked off one star for the inconvenience of the screwing, but I have a feeling I will be getting a lot of use out of this.
