This product had been so disappointing. We missed the return window hoping that it would get better. It rusts so easily. Every time water is just sitting on the pan rusts appears...it should not do that. :( We spent 60 dollars on it and have used it 3 times and need to throw it away because of the constant rust.

LOVE the way this grill pan cooks with induction stove top. Flavors settle in superb. I'm a vegetarian cooking with induction (fast, even, intense heat range), while family members cook steak on electric range. Definitely easier weight to handle, but had to look up manufacturer cleaning guidelines. Got smaller pan, which I hide, for just vegetarian use.

less heavy than a cast iron but still a little heavy, perfect for days where you dont wanna fire up the grill but still want some nice marks on your meat or veggies., the non stick is really good, heats pretty even

We like cooking ribeye steaks in our Le Creuset cast iron pan, however, I’m on the cardiology side of TikTok and APPARENTLY I can’t be frying juicy ribeyes all the time in butter baths and then finishing them off with a blue cheese crust without earning a free heart attack with a side of stroke.APPARENTLY the cardiologists are nagging that saturated fat is like really bad mmmkay. Like, APPARENTLY the American Heart Association recommends under 10 grams of sat fat per day and not the 100 grams per day give or give 100 grams that we’ve been working with!So with that horrific revelation, we knew we needed to make some heart healthy adjustments in our kitchen and sought out a pan as a reliable as our trusty cast iron but one that enabled as much fat as possible to melt off and stay far away from our arterial walls. Well, shiver me tinder matches, this Merten & Storck lean mean grillin’ machine has been perfect for us.Now, should we cut out the ribeyes entirely? Magic 8 ball says, “signs point to yes.” Will we? “My sources say no.”Indeed, we sent this Merten on its maiden voyage with our beloved ribeyes. The pan heats evenly and quickly. I’ve never heard of black carbon steel before but I am now a fan. Solid performance.Our steaks were seemingly done in no time. I will say, with the high grill ridges dropping out so much of the fat, as well as leaving off the butter and blue cheese, it was less of a flavorful experience than I’m used to, but there was still enough steak joy to be had, albeit with a leaner and healthier vibe. Additionally, there was less crispy fried searing to the steak, as is to be expected, but the char lines from the grill were nice and added some smokey niceness.There is a heft to the pan. Compared to our cast iron pans I felt that the Merten was actually heavier. I think the elongated, thinner, somewhat curved edge metal handle and square base gives it a much different balance than my cast iron pans. For me, this feels heavier than my other pans. But, I’m not picking it up to repeatedly flip and catch pancakes in the air, so I do not foresee any adverse wrist strain from the change in ergonomics.I plan to use this pan for the next 40 years. Which, if it helps contribute to my longevity, I will then switch back to the steak in blue cheese butter baths because 80 years old is long enough. If I get there I’m just going to be gaming on my Xbox and eating the fattiest ribeyes I can find with all the fixins until it triggers my dirt nap.Until then, this pan is a helpful tool to keep a lean Mediterranean style, heart healthy diet on track.

This grill pan with ridges in the bottom of it to suspend the meat above the "fray" (grease) works very well. I tested it out with an old Roman delicacy known in days of yore as Porkimus Chopimus (in today's less elegant or hi-falutin' times simply called Pork Chops).They were delicious and salubrious, and cleaning the grill pan afterward was easy enough.Besides that, the pan looks and feels good (it has good heft to it without being heavy as a bull elephant like some cast iron skillets are). This will definitely be my go-to pan/skillet for meat dishes from here on out. As you can see in the images, it has room for six Porkum Chopums (singular of Porkimus Chopimus).Let me explain my 4-star ratings of the specific qualities, although I gave it 5 overall:Heat Distribution: I don't really know about this; I can't say; by that I mean that I didn't thermometerize the various pieces of pork to see whether they were uniform in temperature, but they all seemed to be evenly done and similar to one another.Easy to Clean: It was, except for the fact that you are advised not to use dish soap on this material (cast iron), so for that reason, it required a little more elbow grease to clean it than if I was able to use the dish soap to do some of that scouring for me. Still, it was easy enough; no complaints.Heat Resistance: I don't know what this means, really. Is it saying it withstood heat by not catching fire, changing shape/melting, and not changing color? If so, in those ways, it performed just dandy — it withstood the heat from the burner just fine, and was thus able to stay in the kitchen ("if you can't stand the heat, stay out of the kitchen").So all in all, I give this pan a 4.5 (rounded up to 5), but in the specific areas just discussed, I can't honestly say it definitely deserves five stars for the reasons delineated above. I will say, though, that I am completely satisfied with this pan and recommend it.
