I have been a meat cutter for over 50 years and find this knife a joy to use. A little stiff but holds an edge very well. I have it's big brother my 10" and both have served me well.

I used to cut fish for a living and know a good blade when I use one.This is a great knife -Well worth the money - holds a god edge, easy to sharpen, well balanced.Love it

Victorinox has long been my favorite brand and this knife does not disappoint! I do butchering for my family and friends so I also ordered the Geiser Ultrasource boning knife to test it out this deer season and that's the only other brand that's come close! Now I have two top choices as my "go-to" knives, but Victorinox literally "edges out" Geisser since it seems to stay sharper longer. Amazon offers the best prices on knives so far too which is only made better with free shipping! Totally satisfied customer on this product.

Best boning knife period. I have spent too much money on "great knives" over the last TWENTY years, only to be disappointed time after time. Try this beauty. I guarantee you will be amazed at the workmanship, razor sharp blade and that delicate hand balance that we all strive for but have a difficult time finding. Recommend this knife for all chefs, home cooks, or anyone who would like a thousand dollar knife at an incredibly inexpensive price. Oh, by the way, I refuse to write a review for any monetary return. I have NEVER written a review for a reduced anything. Nor will I.

This knife is truly the tool of a pro. I work as a cutter in a supermarket and bought a set of knives from victorinox so I could have a personal set to use.. this knife is perfect and considering the top notch quality, the price is outstanding. I would recommend and stand by this brand and style of knife as an experienced cutter.
