This is an excellent specialty knife.It came VERY sharp straight outta the packaging - I was concerned that I might have to run on a whetstone at first, but it does the trick. Great flexibility, not too flexible but enough give to get around.So far I've broken down maybe 10 chickens or so, 2 full pork shoulders, and endless chicken thighs - still super sharp.10/10

Bought this knife to cut up whole chickens instead of paying more for chicken parts. The knife sliced through joints and helped deboned parts of the chicken. I was able to slice thin chicken breast with ease. looking forward to trying this with a rack of ribs and a tenderloin.

Product was in great condition, brand new and authentic. Shipping time was acceptable. Definitely will buy more from the seller.Knife is the best, great investment. I broke down and french a chicken with the knife, it was like cutting butter and precessed. Glides smoothly and sharp.

Does a great job with what it's designed for, de-boning meat. Like a hot knife through butter... lol. Sounds like a cliche but it really does have that razor-sharp tip you need to get in and sever joints and remove the meat from the bone. No more dry turkey! only moist, slow-cooked turkey for thanksgiving here on out.

blades are great, but the logos wear off even with careful hand washing. details matter when you're paying big bucks.

I believe Wustof Classic is a solid brand of knife; you get what you pay for here. Wustof has kept their quality while others have watered it down. This knife is perfect for boning, of course, has a great weight a feel to it. The length of the blade makes it easy to handle which is great for those of us who do not have the skills of a professional meat cutter. Keep it sharp, hand wash only, and it will last a lifetime.

Die Messer der Wüsthof Classic Serie liegen immer gut in der Hand, sind sehr scharf und haben eine ausgezeichnete Verarbeitung. Das Messer ist zwar nicht billig, aber dafür hat man - bei entsprechender Pflege - ein Messer für Jahrzehnte.

Outstanding feel and balance, this knife was very sharp right out of the box and only needed a little honing to become "scary sharp". The blade has just the right amount of flex for boning tasks but is so light and well balanced you will reach for it to perform many tasks quickly and efficiently when the horsepower of your chef's knife is not needed. With only reasonable care and maintenance required, Wusthof knives will be handed down to your grandchildren as heirlooms.

Received this knife promptly and securely wrapped. My wife had been complaining that her Gerber knives which I bought 30 years ago were no longer doing their job. She wanted this type knife to fillet fish and to remove the skin from salmon and other fish. This knife does the job and I don't have to use the sharpening steel that often to keep it up. I normally don't pay this much for a single knife, but if this one lasts another thirty years we'll be all set.

Excellent For German knives.Well made and the classic and Ikon are the 2 top shelf lines. The other Wusthof lines rapidly go down to Wall-mart levels. These knives are easy to maintain and sharpen when necessary. They offer good value for the money. I am gradually beginning to shift to Japanese high Rockwell knives but the good ones (not the basic Shun) are Extremely expensive & 2 powered steel cored Damascus stainless steel knives cost more than an 8 piece Wusthof set
